Guide to Lamb Cuts


Lamb Cutlet -When the rack of lamb

is cut into individual chops.


           

Lamb Chop - is a cut of meat

cut perpendicularly to the 

spine, and usually containing 

a rib and served as an individual portion. 

 

       

Rack of lamb - consists of one

side of the ribcage of a lamb with

its enclosed meat.             

             

Lamb Shank - This cut of meat 

comes fromthe upper part of

the Lamb leg.


    

Leg of Lamb - A firm family

favourite perfect for roasting, this 

cut of meat most commonly comes 

as a Leg (bone-in), shoulder (bone-in),  or easy carve (leg or shoulder).
